FEEDING THE FIVE (THOUSAND) - sneaking superfoods into their treats. Best Flapjacks Ever.

I'm always trying to sneak "super foods" - or just healthy extras - into tasty snacks. For instance I add turmeric to nearly all my savoury dishes, freshly squeezed ginger into my juices and Chia seeds get added to bread and oat based goodies.This is one of my favourite recipes for "super-fooding" up our treats - and one of the boys favourites. 

These beauties are guaranteed to take you right through the dark days ahead and have you all bounding all the way to school and back. Brilliant as lunch box puddings or after school treats too. 

This recipe has Chia for energy and Linseeds for digestion. I always buy organic seeds from my local health food shop.  I also love this recipe because it's easy. You basically chuck it all in a saucepan, melt, mix, transfer, bake and there's hardly any washing up. It also has butter and sugar and golden syrup in abundance - but that's what make these so delicious.

Ingredients

240g unsalted butter

180g demerara sugar

6 large dollops* of golden syrup 

400g organic rolled oats

40g milled (or whole) organic chia seeds**

40g milled linseed seeds

100g sesame seeds

Essential bits of kit:

Preheated oven to 180 C (160 C fan assisted)

Lined baking tray - I use a small roasting dish (approx. 20 x 30cm) for this and a plastic washable liner

Large heavy bottomed saucepan

Scraper spoon

What to do:

1. Melt butter with sugar and golden syrup on low heat until butter all melted.Stir gently.

2. Add sesame seeds and let them sizzle for a moment then add other seeds.*

3. Remove from heat. Add oats. Mix together and then scrap from saucepan into lined tray. Press into tray.

4. Bake for 15 - 20 minutes - checking for golden colour.

5. Remove and leave to cool in tray. Leave to set (approx. 1 hour - if you can wait) and turn onto wooden board and  dissect into fingers or squares with chopping knife.

*(dollop defined as dessert spoon stuck in the Golden Syrup tin, swivelled, whipped up to avoid drips and dolloped. Sometimes slightly more than a dollop gets slipped in)

**I have listed the ones that work for me but I often include pumpkin/sunflower seeds and anything else that looks nutritious. I often add a heaped tablespoon of hemp powder too.

As with all things this is not an exact science. If you normally buy big - we recommend you buy big, and vice versa.
